German Potato Cakes

Amazingly tasty and quick to make. Very filling.  Serve with a poached egg, or mix with some shopped up sausage for a really hearty snack.

What You Need:

Potatoes

Onion or a few spring onions

Salt and pepper

Large egg

Plain flour

2 tbsp sunflower oil

 

Method:

Grate the potatoes coarsely and press out excess water.  Season and mix in a little plain flour and the the beaten egg until well combined. Chop up the onion and mix in well. Heat the oil in a large non stick frying pan until very hot. Place a tablespoon sized serving of the mixture in the pan and flatten slightly to form a patty. Cook until  the underside is brown and fairly crisp, flip over with a palette knife to cook the other side. Serve immediately with a crisp green salad.
